Escargots with Goat Mozzarella
Marinated Escargot with Garlic and Parsley


  • 3 Tbsp. butter

  • 5 garlic cloves

  • 1/2 Tbsp. olive oil

  • 25 white mushrooms

  • Salt and Pepper

  • 25 escargots

  • 1 cup mozzarella cheese

  • parsley (chopped for garnish)


Preheat the oven to 400°.
Melt the butter, mix it with the garlic, and set aside.
Coat the mushrooms in 3 tsp. garlic butter + olive oil. Lay them out in a greased pie tin, and bake for 10 minutes.
Take the mushrooms out of the oven, and carefully add 1 escargot into each mushroom in the small indent where the stem was removed. Drizzle any extra garlic butter over the mushrooms, and bake for another 3 minutes.
Top with cheese and bake for 3 more minutes, then turn the oven to broil for 1 minute.
Garnish with parsley to serve!
